Asari Clam 21/30

They are shellfish found in inlets throughout Japan. In recent years, the demand for these clams skyrocketed where they were introduced to the West Coast of the US and are known as Manila Clams in grocery stores. They have a wonderful briny flavor that is different from other varieties of clams which makes a soup refreshing.

They also have abundant Vitamin B2, Calcium, and Iron, protein content that is half of that in a fish, and also low in fats. Since their umami content is high, it makes great soup stock.
